2 Carb Blueberry Kodiak Protein Muffins

Makes 24 muffins
Approximate macros per muffin
7g protein 15g carbs 2g fat

-424g Kodiak cake mix
– 2 eggs
– 16oz unsweetened vanilla almond milk
– 4oz unsweetened applesauce
– 340g greek yogurt
– 226g cottage cheese
– 100g blueberries – 2 scoops vanilla protein
– 1 tbsp cinnamon
– Optional 1/2 c sweetener of choice (stevia coconut sugar…) I chose to leave this out of mine to avoid added sugar

Preheat oven to 350°. Mix all ingredients except blueberries in a bowl and then scoop into muffin tins, it’s about 1/3 c in each. I like to add my blueberries to the tops once the batter is in the muffin tins. Bake 15 mins or until no longer gooey in the middle. Great for a quick snack or breakfast. Eat alongside a protein shake or some greek yogurt to increase protein.
